Simple ingredients, easy to make, and supposedly <$1 per serving per Vegan on the Cheap...I changed a couple of things and it was delicious!
2 Tbs. olive oil
3 cloves garlic, minced
1 (28 oz) can crushed tomatoes
2 cans white kidney beans or other white beans, drained and rinsed
1/2 tsp. oregano
1 tsp. basil
1 tsp. parsley
1 bay leaf
2 cups vegetable stock
a good bit of black pepper
salt to taste
8 oz (or less if you want it more soupy) small pasta
1. In large pot, heat oil over med. heat. Add garlic and cook on med-low heat for 1 minute. Stir in tomatoes, beans, oregano, basil, parsley, bay leaf, veggie stock, and salt and pepper. Simmer over low heat for 20 mins.
2. In a large pot of boiling salted water, cook pasta until al dente (about 7 mins). Drain and add to bean mixture.
3. Simmer for about 10 more minutes to blend flavors and finish cooking pasta. Discard bay leaf and enjoy!
